I LOVE PINTEREST! Here is yet another idea that I found on that wonderful site. I adapted this recipe from bringinthepink.com. I have to say that it is not as sweet as your traditional banana bread, but there is NO SUGAR, NO BUTTER, and NO OIL, and it is DELICIOUS!
Ingredients:
- 3 mashed bananas (super ripe!!)
- 1 cup chopped walnuts (if you desire)
- 1 cup all-purpose flour
- 1/4 cup whole wheat flour
- 1 1/4 cup old fashioned oats
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 1/2 teaspoons cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 6 ounces greek yogurt (I used plain, use vanilla for a little sweeter bread)
- 4 tablespoons honey
- 2 large eggs
- 1 tsp vanilla extract
Directions:
Preheat oven to 350 degrees, and adjust oven rack to lower middle position. Grease one 9×5 loaf pan. In a small bowl, combine 2 tablespoons sugar and 1/2 teaspoon cinnamon. Dust greased loaf pans with the cinnamon sugar mixture; set aside. I had some cinnamon sugar left over and sprinkled on top of the loaf.
Combine the flour, whole wheat flour, oats, baking powder, baking soda, cinnamon, nutmeg, and salt in a large bowl. Set aside. Cream together yogurt, honey, eggs and vanilla using electric mixer. Add the flour mixture until just combined (do not over beat).
Fold in banana mixture and nuts. Poor batter into prepared pan and bake 55 – 60 minutes or until toothpick comes out clean.
